Ok guys, if you make these, I GUARANTEE you will come back on here and thank me over and over lol. They are so soft, moist, yet a slight Fudgy texture with a taste beyond description. The Kahlua Buttercream is so heavenly. This is HANDS DOWN my family’s FAVORITE brownie. And mine lol. Let’s get it started!

Ingredients:

2 1/2 cups all purpose flour
1 tsp baking powder
1/2 tsp salt
2 sticks unsalted butter (2 sticks cubed), room temp
2 cups semi sweet chocolate chips
2 large eggs, room temp
1 1/2 cups packed light brown sugar
1/2 cup Kahlua
1/2 cup chopped Walnuts

Additional adds:

1/2 cup more semi sweet chocolate chips for batter
1/3 cup more chopped Walnuts for sprinkling
1/4 cup more semi sweet chocolate chips (melted) for drizzling
1/4 cup cinnamon chips (melted) for drizzling
1/4 cup Kahlua for soaking Brownies

Hey everyone. Here in Louisiana, this is one of our great spicy dishes. If you’ve never tried it before OR tried it anywhere that’s NOT Louisiana, South preferably, than you haven’t really tried it lol. Let’s get started.

Ingredients:

Cooked rice according to your household

2 packs precooked Crawfish tails (I get mine at Walmart in the freezer section, BUT if you can boil your own live crawfish, it’s the better choice)

2 cans cream of mushroom soup, Campbells (if you use a different brand, don’t blame me lol)

3 cans tomato sauce (8 oz)

1 1/2 empty tomato cans of water

Seasoned salt to taste (I used approximately 1/4 cup, but that’s just me) 🙂

Parsley (about 2-3 tsp)

Garlic powder (about 2-3 tsp)

Cayenne Pepper (about 1 1/2 tsp)

Minced onions to your liking

Lentil Soup with Savoury Pancakes

I’m loving lentils right now! I tried to make a soup with them and it turned out to be delicious, and pairing them with some savoury pancakes turned out to be a great combination!

To make this I used:

1 onion
1/4 cup
2 carrots,
2 cloves garlic,
2 tomatoes
2 cups lentils
3 cups water
1/2 cup spinach
1/2 cup parsley
2 tablespoons of tomato paste
Salt and Black Pepper

Directions

In a large pot, heat oil over medium heat. Add onions, carrots, and parsley; cook and stir until onion is tender.
Stir in garlic, and parsley and cook for 2 minutes.
Stir in lentils, and add water and tomatoes. Bring to a boil. Add the tomato paste, and reduce heat, and simmer for at least 1 hour.
Season to taste with salt and pepper.

To make the pancakes I used:

3/4 cup milk
1 cup whole grain flour

Today was a sunny and beautiful day, my spirits were brought to the Caribbean lol. I’m so ready for full summer to come. But on the other hand, I’m ready for the summer flavors lol. These are so yummy. Let’s get started guys. You’re gonna thank me BIG TIME for these lol. I made a HIT experimenting making these. WOOHOO, haha.

Alright get in that kitchen and grab these for me:
(should make around 3 dozen)

2 1/2 cups all purpose flour
2 tsp Baking Powder
1 tsp salt
2 sticks unsalted butter, room temp
2 cups sugar
4 Large Eggs, room temp
1 tsp Vanilla extract, pure
1/2 cup buttermilk, room temp
1/2 cup Dark Rum
1/2 cup soaked and softened raisins

Guys in my opinion Myers is THE BEST dark rum.

Brownie in a Cup!

Where have 2 minute brownies been my whole life? I discovered these quick brownies that only take two minutes to make, and less than ten ingredients.
I used:

1/4 cup flour
1/4 cup sugar
2 Tbsp cocoa (natural, unsweetened)
Pinch of salt
Pinch of cinnamon
1/4 cup water
2 Tbsp canola oil or vegetable oil
1 to 2 drops vanilla extract

Put all the dry ingredients in a cup (flour, sugar, cocoa,salt, and cinnamon).

Then add the oil and water. Stir until smooth and put it in the microwave for about two minutes and voila!

As a Canadian, I am no stranger to grilling in all weather, ideal or less than ideal. In the rain, we use umbrellas, in the snow we use shovels, and in the hot summer sun we use cold beer. The only weather that stops Canadians from grilling all year round is wind. Not because it’s unpleasant, but because it keeps blowing out the flames.

Here in Norway, grilling is a mere four month affair and only in optimal weather. There of course is the exception, and to them I tip my hat off. It took me fives years living here to finally get my dream BBQ, and now that I have it, I’m unstoppable. I’m sure my neighbors don’t appreciate the smokescreen that often wafts from my terrace. And anyone in a 1-kilometer radius that smells it assumes I must be crazy.

Toasted Coconut Cashew Date Laddoos

Name too long, I couldn’t think of anything better to describe this recipe :-). Have a better idea then just leave it in the comments. Mind you it is a kid friendly website :-). I must confess, before I made these aromatic toasted coconut cashew date laddoos I just wasn’t a big fan of dates. I started to eat them because of my diet that called for eliminating processed sugars with more natural forms. A word of caution it does have approx 8-9 grams of sugar per date, so keep a watchful eye. I just love to eat something sweet after a meal.

The Old Water Mill was heaving with coach loads of aged white-top trippers.  I went inside to order a pot of Earl Grey tea to find that they had sold out, “Utterly unheard of!”  The sweet fresh-faced girl giggled and offered some Lady Grey as an alternative.

“Lovely, with lemon please, I’ll be outside on the terrace.”
The peacocks were showing off, strutting their stuff, shaking their tail feathers, bustling their booty to the sound of some 80 elderly paparazzi, castanet-ing camera clickers.  The staff struggled to weave between them and tidy their crockery laden tables.  Wrist watch tapping coach-drivers were keen to usher and leave, but the oldies were enjoying the floor show.

There is something magical about a morning cup of coffee. Not just any cup, a morning cup. The cup that allows for relaxation with the paper, the internet, a book, or with a friend. The cup that allows last nights dinner to be safely excreted from your body. The cup that gives that morning pick me up after a long night of work, school, or gypsy wrangling.

While I love coffee in it’s more common form of a liquid, the beans and grounds are becoming a quick favorite of mine when it comes to baking. I made my basura cookies last week, and they didn’t stand a chance lasting more than 2 days. The coffee grounds in these cookies really stole the show. Here’s another favorite with the addition of some coffee grounds. Energy bites SHOULD have coffee grounds in them, don’t you think?
